Just Mexican Rice

I like Spanish rice (aka MexicanRice)! As I mentioned, I'm half Mexican. I love this family heritage and I am especially grateful that my family has taught me how to prepare delicious Mexican food.

Today, as long as I can remember, my mother made a recipe for Spanish rice and showed me for the first time a few years ago how to do it (along with empanadas, enchiladas and tacos). Now we do it every week because my children are obsessed and so easy.

This recipe is actually a Spanish rice recipe from a popular Mexican restaurant in Mesa called Mango. If you've been there before and you like their rice, you will love this recipe. It's really a simple, delicious and perfect side of every Mexican dish!

Start by heating the oil in a large pan. Add rice and cook until it gets gold. Add garlic and warm water with chicken broth (or chicken broth). Add tomato sauce, salt, cumin and garlic and stir.

Stir and cover and reduce to LOW and simmer for 30-40 minutes or until the liquid is left. Pooh before serving.

Instructions
